Lunch ideas
Lately I’ve been doing turkey roll-ups with cheese and a little mustard — easy and doesn’t weigh me down. Or if I’m actually hungry, a grilled chicken salad hits the spot.
Chicken salad with greek yogurt instead of mayo has been my go-to, way easier to get down at 50+ lbs into this. Cold shrimp with cocktail sauce on busy days too.
Still early days for me, so portions are small anyway, but a cup of cottage cheese with pineapple keeps me from skipping lunch entirely. Egg salad made with mustard instead of mayo also stays down easy on rough days.
Soup has been my lunch savior lately — a cup of chicken tortilla with extra shredded chicken gets enough protein in without feeling heavy. On my Saxenda days when appetite is basically zero, I lean on that over anything solid.
Tuna mixed with a little hummus on cucumber slices has been my thing since around the 15 lb mark — light enough that it never sits weird. Also big on leftover grilled chicken thrown into a bagged salad when I can't be bothered to cook.
Cold shrimp with cocktail sauce has been my go-to lately, easy protein when I don't feel like making anything. Also second whoever said leftovers in a bagged salad — that's how I've gotten through half of my 42 lb loss honestly.
Same boat at 15 down and shrimp with cocktail sauce got me through the first stretch too. Lately I've been doing cottage cheese with everything bagel seasoning and cherry tomatoes when I want something cold that doesn't take effort.
Tuna salad wraps on low-carb tortillas have been my lunch most days since the start, and they kept me full all afternoon even now at 64 down. Leftover rotisserie chicken thrown into a salad kit is my lazy backup.
